Spicy Sausage and Barley Soup {Crockpot Recipe}

One of many things that I love about winter – HEARTY SOUPS.

I’ve had a recipe for a Spicy Sausage & Potato Soup that I adore.  Unfortunately I don’t know where I got it but my best guess is a book at the library 6-8 years ago.

The only problem with the recipe?  D does not like potatoes in soup.  That meant this recipe got relegated to the once-a-winter recipe list.

Then came my ahh-haa moment.  D LOVES the “broth”, why not try an alternative grain?  I considered noodles and rice but neither are as easy in the crockpot in my opinion as barley.

The result is a delicious, hearty soup that takes almost no prep.  CAN’T BEAT THAT.

A word of caution:  This soup is S-P-I-C-Y.  Not burn-your-mouth spicy, but probably not kid-friendly either.  Perhaps your children handle heat better then mine.   If so, great!  If not – make this anyway and feed them something different (its just one night;)  I thought about toning down the heat BUT then it wouldn’t be the delicious belly-warming, tongue-tingling soup that it is.

I just happened to share left-overs of this soup with my dad at lunch today.  Our thoughts?  This is a perfect day-after-Thanksgiving dinner – filling but not heavy (especially paired with a salad), provides a little kick, etc.
